High in Peru’s northern Andes, the Minca region of San Ignacio is known for small family farms perched along steep mountain slopes between 1,600 and 1,900 meters above sea level. Here, cool nights, warm days, and fertile clay-loam soils create ideal conditions for slow cherry development and remarkable sweetness.
Cajamarca has emerged as one of Peru’s most celebrated coffee regions, producing clean, chocolate-forward lots accented with gentle fruit tones and balanced acidity.
Producer: Smallholder Farmers — Minca Community Lots
Minca coffees come from a network of smallholder producers, many cultivating less than two hectares each. These farmers grow traditional varieties—Typica, Bourbon, and Caturra—using organic practices passed down through generations. Once harvested, their cherries are brought to communal processing centers that prioritize traceability, environmental stewardship, and cup quality.
Process: Washed
Only fully ripe cherries are hand-selected, depulped, and fermented in small tanks for 18–24 hours.
After fermentation, the parchment is washed with clean mountain spring water until the mucilage is fully removed. The coffee is then dried on raised beds or solar dryers for 10–14 days, depending on weather.
This slow, deliberate process preserves clarity and sweetness while highlighting the region’s natural cocoa and fruit character.
