About This Coffee
Grown in the lush highlands of Matagalpa, this coffee benefits from fertile volcanic soils, steady rainfall, and cool mountain temperatures—conditions that consistently produce coffees with clarity and sweetness.
Shade-grown under mixed agroforestry systems, these farms support biodiversity while naturally enhancing cup quality. The result is a coffee that reflects Nicaragua’s northern ranges: clean, balanced, and dependable.
Processing
This lot is fully washed and patio dried. Ripe cherries are selectively handpicked, depulped, fermented, and thoroughly washed, then dried slowly on patios to achieve optimal moisture content.
The washed process emphasizes clarity, structure, and origin expression, making this an excellent choice for those who value a crisp, refined cup.
Grading & Quality
This coffee meets SHG (Strictly High Grown) and EP (European Preparation) standards—meaning higher elevation density and meticulous sorting for reduced defects. The result is a consistent, specialty-grade coffee with excellent roasting performance.
