About This Coffee
Sourced from the highlands of Ethiopia’s Sidama Zone, this Grade 1 natural lot comes from the Bura Hamasho site, operated by Zablon Trading. Smallholder farmers in the surrounding communities deliver ripe cherries to the station, where they are meticulously sorted and processed.
The region’s fertile red clay soils, high elevation, and consistent rainfall create ideal conditions for producing coffees with exceptional clarity and aromatic intensity. This lot highlights Sidama’s signature profile—floral, fruit-driven, and refined.
Processing
This coffee is produced using Ethiopia’s traditional natural (dry) process. Ripe cherries are handpicked, sorted, and dried on raised beds under the sun. They are turned regularly to ensure even drying and prevent defects.
Drying occurs with the fruit intact—skin, pulp, and mucilage—allowing sugars to fully develop and infuse the bean. Once optimal moisture is reached, the dried fruit is removed, revealing a coffee that is deeply sweet, intensely fruity, and complex.
